This is a soft dough. It’s best not to handle with your hands too much. Have all ingredients ready to go, and work quickly and as gently as possible.
2 ¼ unbleached flour
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
1 ¼ cups sugar, plus 1/3 cup for rolling
2 ounces cream cheese, cut in 8 pieces
6 tablespoons unsalted butter, melted and warm, but not too hot
½ cup vegetable oil
1 large egg
1 tablespoon whole milk
2 teaspoons vanilla
Whisk together in a medium bowl, flour, baking powder, baking soda, and ½ teaspoon salt. Let rest. In large bowl add sugar and cream cheese, pour warm butter over sugar and cream cheese, and whisk together until blended. Add egg, oil, milk, and vanilla. Mix together until blended. Add flour mixture. Blend well. Form into 1 tablespoon balls and roll into sugar. Place on parchment lined baking sheet. Press down lightly. Place in preheated over and bake for 10-12 minutes until edges are set. Bake one sheet at a time. Over baking will make the cookies hard.
